Worlds Best Vanilla Pudding (This can also be used as a pie filling)

 

Version 1

 

2 Cups of whole milk

½ Cup Sugar

1 Vanilla Bean (seeds removed from pod)

1 Tablespoon Butter

¼ Teaspoon Vanilla Extract

3 Tablespoons of Corn Starch

 

Start warming milk on low heat while preparing the vanilla bean. Stir the beans into the milk. Add the butter and increase the heat to medium. When the butter melts add the sugar. As the mixture continues to warm add the corn starch stirring constantly. Just before boiling the mixture will thicken and stick to the back of a metal spoon. When it reaches’s this point remove it from the heat and continue stirring, add the vanilla extract. Pour into bowls let cool and enjoy. This pudding forms a thick skin on the top. Some people try to prevent this but I feel this way. If you do not like it peel it off and place the skin on my plate!

 

Note: For pie filling double amounts of everything and cut back slightly on milk. 

 

Version 2 – For those with special dietary needs

 

Change whole milk for Organic Soy Milk

Change sugar to Organic Evaporated Cane Juice

Change Butter to Organic Butter

 

The method is the same.
