Banana Vanilla Fritters

 

Preparation time:  15 minutes

Cook time:  20 minutes

 

Ingredients:

 

2 ripe bananas

1 cup buttermilk (or just milk)

1/3 cup vegetable oil or vanilla oil

1/8 teaspoon baking soda

4 teaspoons baking powder

1 ¼ cup all purpose flour

1 tablespoon vanilla extract

2 eggs

A pinch of salt

Vanilla powder sugar

Cocoa Powder

Ground cinnamon

Vegetable oil for frying

 

Preparation:

 

Preheat a frying pan at medium-high heat and pour the oil. Peel and smash the ripe the bananas in a small bowl and put them aside. Whisk the eggs in a large bowl and add the vanilla extract, and vegetable oil. In another bowl sift the flour, baking soda, baking powder, salt, and sugar. Add the dry ingredients to the egg mixture and whisk until all of the ingredients are well mixed but do not over mix.

 

Spoon the batter into the frying pan with a spoon and deep fry until both sides are dark golden brown.  Remove from heat and season with ground cinnamon. Before serving sprinkle your fritters with vanilla powder sugar and cocoa powder.

 

Serve warm.
