Banana Cream Pie Pie Shell ½ cups flour 1 teaspoon baking powder ¼ teaspoon salt ½ cups rolled oats 1 cup brown sugar ¾ cup margarine room temperature 1 teaspoon vanilla extract Preheat oven to 375 degrees. Cream butter, sugar , and vanilla extract. Add eggs one by one and mix well. Sift together flour, baking powder, and salt. Add to the wet mixture. Spray pie baking dish with a non stick oil and pat mixture. Bake for 35 minutes or until browned and let it cool. This recipe will give you two pie shells. Cream 4 egg yolks 1 ½ cups heavy cream (or half and half) 1 vanilla bean cut lengthwise ¾ cup sugar 2 tbs butter 3-4 tbs cornstarch 4 ripe sliced bananas separated Whipped cream and vanilla powder for garnish Melt butter in a big sauce pan in low-medium heat. Pour heavy cream and scrape vanilla bean. Put the seeds into sauce pan along with the empty pods for additional flavor. Pour sugar and cornstarch and stir constantly. Slightly beat the egg yolks. Add some of the cream mixture to egg yolks to temper, then add the egg yolks to cream mixture and stir constantly until thickened. Stir for 30 more seconds and remove from fire. Spread first two banana slices on pie shell then pour cream on top. Spread thoroughly and pour second half of bananas. Cover with foil and put it in the refrigerator for a couple of hours to cool off. Before serving put whipped cream on top and sprinkle with vanilla powder. Bon Appetit!!
