Father’s Day Breakfast

Ingredients

1-2 tablespoon infused vanilla-herbed oil
1 Sage sausage package
7 medium size diced Yukon potatoes
½ cups sliced mushrooms
5-6 slices of cooked bacon (I like it crunchy)
1/3 cup Gorgonzola cheese
2 cups chopped fresh spinach
Chopped tomatoes for garnish

Preparation

Heat the oil in a large skillet on high. Add the sausage,break it down with the back of your spoon until cooked thoroughly. Put sausage in a bowl and keep the drippings. Add the potatoes to the drippings and cook them until golden brown. Adjust the heat if necessary. Add the mushrooms and cover the pan until the potatoes are completely cooked. Add the Gorgonzola cheese, bacon, and spinach. Season with salt and pepper and stir until all of the ingredients are completely incorporated.

Remove from heat, sprinkle chopped tomato and serve immediately.
